Suure Leberli aux oignons grillés

Ce qu'il vous faut

personnes

250g de foie de veau (en bandes d'1 cm d'épaisseur)

75g d'échalotes (en petits cubes)

50g de pommes, par exemple Gala (en cubes de 5 mm)

50ml de vinaigre balsamique Hugo Reitzel

80ml de jus de veau

50g de cornichons Hugo Reitzel

50g de rondelles d'oignon

sel, poivre, paprika en poudre, farine, huile de tournesol

Comment préparer

Faire frire le foie de veau dans une poêle chaude avec un peu d'huile sur toutes les faces et le sortir de la casserole.

Maintenant, coupez les échalotes en dés avec les pommes et les laisser suer brièvement dans la casserole.

Déglacer avec le vinaigre balsamique et laisser réduire pendant environ 2 minutes.

Ajouter le veau et laissez réduire pendant 2 minutes.

Ajoutez maintenant le foie, le sel et le poivre et remettez-les dans la sauce 1 min.

Faites brièvement bouillir le tout et servez immédiatement.

Saupoudrez les rondelles d'oignon de paprika en poudre et de farine et faites-les frire jusqu'à ce qu'elles soient croustillantes.

Saupoudrez le foie d'oignons frits et de dés de cornichon.

Petite astuce

Il est important de ne pas trop cuire le foie, car il sèche très vite !
