Filet de Fera à la Moutarde

10 filets de fera

250g de moutarde mi-forte Hugo Reitzel

250g de chapelure

2 bottes de ciboulette

300g de beurre (dont 150g pour la sauce)

25cl de vin blanc sec

150g d’échalote hachée

3 cuillères à soupe de fumet de poisson

3 grosses cuillères à soupe de crème

Sel et poivre du moulin

5 verres d’eau

Comment préparer

Faire chauffer dans une poêle les filets de fera côté peau. Hors du feu, les badigeonner côté chair de moutarde. Parsemer de chapelure et de ciboulette hachée et déposez une noisette de beurre. Réserver.

Dans une casserole, faire réduire le vin blanc, l’eau, l’échalote et le fumet de poisson. Saler et poivrer. Ajouter la crème, le beurre et le reste de moutarde. Faire réduire pour obtenir une sauce onctueuse.

Passer le poisson 5 minutes au four.

Dresser un filet sur chaque assiette et déposer la sauce à côté.

Servir avec un riz pilaf, des pommes de terre cuites à la vapeur ou une julienne de légumes.
