7.5dl Wasser
Bratenjus klar, 5 Würfel
125g Butter
2Tassen Hugo Reitzel Croutons Knoblauch
Salz, Pfeffer, Rosmarin, Oregano, Thymian
Wie man Zubereitung

Fleisch mit Salz und Pfeffer würzen und im Olivenöl in der Bratpfanne gut anbraten. Anschliessend in einen Römertopf legen.

Zwiebeln, Sellerie, Karotten in kleine Würfel schneiden und in der Bratpfanne im Fleischsaft anbraten.

Mit Rotwein und Bratenjus ablöschen und Wasser dazugeben.

Rosmarin, Oregano und Thymian beigeben und kurz kochen bis die Bratensauce zerlaufen ist, das Ganze über den Braten im Römertopf giessen. Im Ofen ca. 60 Min. zugedeckt bei 120 Grad garen.

Deckel abnehmen und Maiskölbchen, Borettana-Zwiebeln und Champignons dazugeben und nochmals 10-15 Minuten mitgaren.

Vor dem Servieren das Fleisch in Tranchen schneiden und zurück in den Saft legen. Damit die Bratensauce schön glänzt, 100g Butter in den Fleischsaft dazugeben und zerlaufen lassen.

Als Garnitur Croutons über den Braten streuen und mit Nudeln und Gemüsegarnitur servieren.
